Happy Holidays Everyone!
Hey Y’all! It’s Christmas Eve and I realized I haven’t made any Christmas cookies yet! So Jennifer, Grace, and I decided to try something different this year. We didn’t want to make the same old Christmas sugar cookies. The three of us agreed that we all wanted something with chocolate in it.
I immediately thought about my friend Lorraine, we were stationed in Germany together. The one thing I’ve always remembered about Lorraine is that she made the most amazing chocolate chip cookies, with milk chocolate M &M’s. She lives in New York now so I gave her a call. After we spoke for a few hours I asked her if she still made those delicious cookies, and she knew exactly what I was referring to.
These cookies will make your mouth water, they’re soooo good. It’s the type of cookie you make for special occasions and they’re absolutely perfect for the holidays. These cookies are incredibly chewy, soft, and delectable. We decided to bake this chocolate chip cookie recipe. If y’all have children, then this is the best recipe to make as a family.
So let’s get baking, but as always before we start we need a list of ingredients.
Chocolate Chip Cookie Recipe
Ingredients
-1 1/4 cup of All-purpose flour
1 stick of unsalted room temperature butter (1/2 cup)
1/2 cup of brown sugars, (1/4 cup of light and 1/4 cup of dark packed together)
-1 large egg
-1/4 cup of granulated sugar
-2 teaspoons of vanilla extract
-1/4 cup of vanilla pudding mix
-1/2 teaspoon of baking soda
-1/4 teaspoon of salt
-3/4 cup of M &M’s, plus more for adding to dough (optional)
-1/2 cup of semi-sweet chocolate chips, plus more for adding to dough (optional)
Prepping the Ingredients
Since they’re so many different ingredients, Grace prepped them before we started baking. Also prepping your ingredients, beforehand helps to keep everything organized and minimizes clean up.
First, pour 1/2 brown sugars (1/4 light and 1/4 dark brown sugar) into a bowl.
Then, pour 1 1/4 cup of flour into a measuring cup.
After that pour 1/4 teaspoon of salt, into a measuring spoon.
Pour 3/4 cup of M &M’s into small cup or bowl.
Lastly, pour your 1/2 semi-sweet chocolate chips into a measuring cup.
Once you’ve finished prepping majority of your ingredients, you can get started.
How to Make this Chocolate Chip Cookie Recipe
You will need a mixer, and in this post I’m using a Kitchen Aid standing mixer. First, you add 1 stick of unsalted room temperature butter into the mixing bowl.
Next, you will add 1/2 cup of brown sugars (1/4 light and 1/4 dark).
Then, add 1/4 cup of granulated white sugar, 1 egg, and 2 teaspoons of vanilla extract into your mixing bowl.
Once you’ve combined all ingredients you will mix them together on medium speed for about 3-4 minutes or until well combined.
After these ingredients have combined, stop and scrape the sides of the mixer.
Then, add in the 1/4 cup of vanilla pudding mix(Do not make the pudding mix, treat is as a dry ingredient), 1 1/4 cup of flour, 1/2 teaspoon of baking soda, and 1/4 teaspoon of salt.
On low speed mix these ingredients for about 1 minute or until well combined.
Next, we’re going to add the 3/4 cup of M & M’s.
Lastly, we’re going to add 1/2 cup of semi-sweet chocolate chips.
Once you’ve combined the M &M’s and the semi-sweet chocolate chips, mix on low speed for about 30 seconds.
When the dough is finished mixing be sure to scrape the dough off the paddle using a spatula.
Time to Chill the Chocolate Chip Cookie Dough
You will want to chill your dough for 2–3 hours, in the refrigerator. You don’t want to skip this step, because it really helps keep your cookies; thick, soft, and chewy. No one wants a hard, flat, and thin cookie, so chill your dough!
I simply wrapped my dough in plastic wrap and let it chill for 3 hours.
After your dough has chilled, allow it to unthaw for a few minutes. While you’re waiting, line your large baking pan with parchment paper.
It’s Baking Time
Preheat your oven to 325 degrees, begin to roll the dough in your hands into equal sized balls. Place the balls onto the parchment paper, you should be able to make 12 cookies.
Now use your fingers to slightly flatten your dough into mounds. Once you’re finished you can place more red and green M & M’s onto your cookie dough to make them more festive.
Place your cookies into the oven for about 10-12 minutes. Be sure to watch your cookies you don’t want them to overcook.
Remove your cookies from the oven and allow them to cool on a cooling rack.
