Blackberry Cobbler Recipe from Scratch

Ingredients for Blackberry Cobbler

  • 2 cups of fresh blackberries
  • 1 cup of sugar
  • 1 cup of water
  • 3 tablespoons of cornstarch
  • 2 tablespoons of unsalted butter
  • 1/2 teaspoon of vanilla extract

Ingredients for Homemade Pie Crust

  • 1 1/4 cups of all-purpose flour
  • 1/2 cup of butter chilled and diced
  • 1/4 cup of ice water
  • 1/4 teaspoon of salt


  • First, I put my blackberries in a colander and rinsed them on low pressure, because you don't want to crush your blackberries. I washed and rinsed them a few times just to make ensure they're clean.
  • Allow them to drain in the colander for a few minutes and then put them in a separate bowl.
  • After you've washed your  blackberries, you can began prepping them for your cobbler.  You will want to slice your 2 tablespoons of chilled unsalted butter into small cubes. 
  • Then,  you'll add  your 2 tablespoons of diced and chilled unsalted butter, and 1 cup of sugar into the bowl with the blackberries. You may want to add a little more sugar, but that depends on the tartness of your berries. 
  • In that same bowl, continue to add 3 tablespoons of cornstarch,  1/2 teaspoon of vanilla extract,  and 1 cup of water. 
  •  Next,  fold the berry mixture over and allow the sugar to break down the juices from the berries. Once, you've added all of your ingredients together, you will let everything set in a bowl for about 30 minutes.
  • As your blackberries are marinating in their own juices, begin to butter your pan for your blackberry cobbler.
  • For the pie crust, combine 1 1/4 cups of all-purpose flour and 1/4 teaspoon of  salt. Cut the  1/2 cup of butter chilled into small cubes.  Stir in 1/4 cup of water, one  tablespoon at a time.
  • Next, you will flour your countertop and being to roll out your crust with a rolling pin.
  • Once you've let your mixture set, you can pour  it into your buttered dish. Preheat your oven to 350 degrees.
  • Then, cut the crust  into squares, so you can overlap them onto your blackberries.
  • Continue to overlap your crust onto your blackberries, but be sure to leave spaces in between the crust. So the sweet juices  from the berries can bubble up through the cracks, it's a Southern thing.
  • Then, brush your crust with melted butter.  When you've finished place your cobbler in the oven for 30 minutes or until the crust is golden brown.


Blackberry Cobbler is the perfect dessert for the summer, all you need is a little vanilla ice cream or whipped cream and you're ready to enjoy.
