How to Make Southern Style Potato Salad

Happy Wednesday Y’all!

Potato salad, is the perfect cold or warm side dish for a Southern barbecue. It also goes well with fried chicken, pork chops, and hot wings. When I first began making potato salad it had the best flavor, but I would boil my potatoes to death.  I always ended up with mashed potato salad…lol. I finally learned that I was cooking my potatoes too long.

The type of potato that I was using also made me unhappy  at the time I was using new potatoes. So I switched to Idaho potatoes and I haven’t looked back. I’ve also learned to cut my potatoes into larger cubes. Which keeps your potatoes sturdier, so they won’t fall apart. Hence, you’ll have a nice southern potato salad instead of a mashed potato salad.  So let’s get started with this “No this is Not Karen’s Bland A** Potato Salad.”

As always before we start cooking we need a list of ingredients.

Ingredients

-6 Large Idaho Russet Potatoes

-6-7  Large boiled eggs

-Smoked Paprika

– 3 tablespoons of Sweet Relish

-1 tablespoon of Mustard

-1 1/2 cup of Miracle Whip mayonnaise

-Salt

-Pepper

-1 tablespoon Sugar

-Real Bacon bits

* Onion(optional)

As I’ve mentioned earlier, I switched from new potatoes to Russet potatoes. I chose Russet potatoes because they’re heartier and have a better bite to them.

How to Cut Your Potatoes

How to Peel Potatoes for a potato salad

First, always remember to wash your potatoes before you began preparing them. Then, you peel the skin off your potatoes.

Once you’ve finished peeling your potatoes you will need to cut them in half.

Then, I cut my potatoes into cubes. When they’re cut into cubes,  you can fold  them into your ingredients, and you won’t have to worry about your potatoes falling apart.

Boiling the Potatoes

Then, you boil your potatoes for about 20 minutes or until fork tender.

Since, I like an eggy potato salad I’m going to boil 7 egg for about 10-15 minutes. I usually only use 6 eggs, but I boil an extra one just in case one doesn’t come out properly.

Dicing the Eggs

Once the eggs have finished boiling and have cooled, I began to cut them. First, I cut them in half and then I proceed to dice them into smaller pieces.

After I finish cutting my eggs, I set them aside and prepare to drain my potatoes.

Once my potatoes are finished I drain them over the sink into my colander.

Then, in a separate bowl I begin to combine my potatoes and my diced eggs.

Next, I add in  3 tablespoons of sweet relish, and 1 1/2 cup of Miracle Whip or any other mayonnaise of your choice. 

Add in just a little smoked paprika.

Then, add 1 tablespoon of mustard, you can also add an onion it’s completely optional. Personally, I don’t care too much for an onion in my potato salad.

Began to fold over your ingredients add salt, pepper, and a 1 tablespoon  sugar, if you don’t like a really tangy potato salad.

Continue to fold over until everything is well mixed.

Then you  put potato salad into a serving dish and add some real bacon bits. I  may have gone a little overboard, with the bacon but honestly who doesn’t love bacon????
